Fresh Pick
Kassler pork chops are cured using salt and smoke. To warm-through a Kassler chop, fry it on both sides over medium heat and finish it in a 350˚F oven for 10 minutes.

Quick Fire
Streamlined medianoche (midnight) sandwich: Preheat your oven to 350˚F. At about 11:25 p.m., warm up a chop (see Fresh Pick above for instructions). Cut a large, crusty-on-the-outside-and-soft-in-the-middle French loaf in half lengthwise and slather on your favourite mustard. Layer in slices of warmed Kassler chops, Swiss cheese and dill pickles. Place the sandwich on a baking sheet with another sheet on top and press it down nice and flat. Put a heavy pot on top and put the whole thing in the oven to heat through for 15 minutes. At five to midnight get it out of the oven and let it cool for five minutes before ringing in the new day with a midnight feast.
